| • La Baie: The hotel's signature restaurant offers progressive European cuisine in a refined yet intimate ambiance. With a name like La Baie, the restaurant at The Ritz-Carlton, Dubai has always made strong ties with Neptune’s bounty, and never more so than now. In a city now famed for its restaurants, their new menu at La Baie is something quite different. Chefs Cederic Darthial and Randy Joung have created an inspirational tasting journey into the ocean depths. It’s French, it’s Japanese. It’s incandescent with flavour and each mouthful is exquisitely beautiful. The menu is strongly structured and begins with Chef Randy’s Sushi Stage, combination platters of sushi, sashimi and maki, with magical names such as emperor sushi, rainbow dragon and sashimi san. The appetizers include small tasting portions such as scallop coriander ceviche, red snapper vanilla carpaccio, and seared crayfish with eggplant caviar and a caramel sauce – and guests are encouraged to select three or four of these perfectly formed offerings at a time. Chef Cederic gets into full stride as guests approach their main course. Dishes such as seared turbot with roast squash, celeriac mousseline and chorizo red wine compóte, vie for attention with delights such as pan-fried sea bass with roasted dates, Mediterranean couscous and champagne sauce. Dishes like halibut fillet with a macadamia crust, white bean ragout and lemongrass sauce display Cederic’ masterful eloquence at the stove. This is playful, imaginative and cooking at it’s finest! For meat lovers there’s an original selection on the menu: try Chef Cederic’s lamb noisette and shoulder confit, which is served with candied garlic, artichoke barigoule and lavender jus, or beef tenderloin with liquorice turnip purée, sweet shallot confit and Szechwan jus. Or why not take your pick of one of the Canadian or Rock lobsters straights from La Baie’s live tanks. |
